SWEET TREATS TO BEAT THE HEAT
Whether you are getting out and getting active or just looking for a way to beat the heat, making a “sweet” treat together as a family can be a fun activity and a way to cool down. Two of our favorite summer time treats to make are “nice” cream and watermelon pizza. We’ve found that having kids be a part of the process helps to teach them how to have healthy eating habits. Our kids would eat ice cream every day of the summer if they could. The nice cream is a twist on store-bought ice cream. It uses mainly fruit and coconut cream or another type of milk-alternative base. Our kids love it. You can mix and match combinations based on what is in season too. Our kids love having Pineapple Dole Whip at their favorite theme park and in Hawaii. We make it at home using this simple recipe.
Recipe: Take pineapple and cut up. We used baby pineapple. The outside part makes a festive dish for the ice cream.
-If you don’t have an ice cream maker, freeze pineapple. Then throw pineapple in blender with your choice of milk. We use coconut milk for an “island flavor.”
-You can also add sliced coconut or the meat from coconuts. We like these Quick crack coconuts. Put all in the blender.
-Top with some of the pineapple pieces and coconut flakes. Serve in the pineapple shell.
-If your crowd wants it sweeter, you can add honey too.
Another fun sweet treat is watermelon pizza. Simply, take watermelon and cut it to to look like a round pizza. Use vanilla yogurt to make “sauce” and then top with different types of fruit.
